Creamed Corn, Pea & Potato Soup for One
- 1/4 cup Onions, diced
- 1 small Potato, peeled and diced
- 1 cup Chicken stock or broth
- 1/4 cup frozen Green Peas
- 1/2 cup Cream Style Corn
- Place onions and potato with Chicken stock or broth in a medium saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stir occasionally.
- Stir in the peas and the cream style corn and simmer for 3 additional minutes or until heated through.
